French Country Chicken in White Wine

*2 carrots
*2 leeks
*4 celery stalks
*salt and pepper
*1/4 teaspoon tarragon
*1 bay leaf
*1 pound chicken breasts, cut up
*1 1/2 cup white wine
*1 1/2 cup chicken stock
*2 tablespoons flour, seasoned

1) Cut vegetables in julienne strips.
2) Toss vegetables with spices and place in bottom of casserole dish.
3) Roll chicken in seasoned flour (lightly saute chicken if desired).
4) Bury the chicken into the vegetables. Pour wine and stock over to barely cover. Bring to a simmer, cover and cook for 40 minutes at 350.
5) Allow chicken to rest 10-15 minutes covered. Remove bay leaf.
