*Don't try and be like the man on the cover of the fitness magazine. Don't try and look like the woman on the television commercial. DO try and be the best that you can possibly be, both mentally and physically!


Curried Chicken Salad


Yield: 4 servings

Ingredients:
*2 cups baked chicken (chopped)
*4 cups lettuce mixture
*1 cup plain fat-free yogurt
*1/2 cup grapes (halved)
*1/4 cup raisins
*2 teaspoons curry powder
*1/4 cup walnuts
*dash of salt

1) Bake chicken at 350 until cooked through. Chop.
2) Chop the lettuce and place into each of 4 bowls.
3) Mix yogurt with grapes, raisins, curry powder, walnuts and salt.
4) Combine chicken with yogurt mixture and spoon on top of the beds of lettuce.
5) Serve immediately or chill until ready to serve.

The perfect pool-side lunch!
