Glazed Roasted Root Vegetable Medley



Yield: 4 half-cup servings

Ingredients:
*1 1/2 cups sliced carrots
*1 1/2 cups sliced, peeled parsnips
*1 1/2 cups sliced, peeled turnips
*4 teaspoons extra-virgin olive oil
*1/2 teaspoon salt
*1/4 teaspoon black pepper
*cooking spray
*2 tablespoons maple syrup
(you can also use sweet potatoes, yams or butternut squash)

1) Preheat oven to 450.
2) Cut vegetables into 1/2" cubes.
3) Combine first six ingredients in a baking dish coated evenly with cooking spray.
4) Bake at 450 for 10 minutes.
5) Stir in maple syrup and bake an additional 20 minutes until tender and golden, stirring once after the first 10 minutes.
