*Yes, winter has returned to Chicagoland. That means flu season is back as well. Here are some tips to help stay healthy:
1) Wear a hat. If you're dressed inappropriately, your core body temperature can drop, and that can lower your immune system's function. Since your body loses the most heat through the head, make sure you wear a cap outside.
2) Drink OJ. Doctors believe vitamin C helps people recover faster from colds, though it does not prevent them. They also agree that eating a well-balanced diet is a better way to get vitamin C than supplementing with large doses.
3) Exercise. Exercising and getting enough sleep (7.5 hours) keeps you healthy and boosts your immune system.
Open-Faced Turkey Sandwiches with Cranberry Chutney
Yield: 4 servings
Ingredients:
*4 slices sprouted grain bread
*4 teaspoons fat-free mayonnaise
*4 teaspoons honey Dijon mustard
*1 1/2 cups baby spinach leaves
*12 oz. thinly sliced turkey
*4 slices 1/3 less fat Swiss cheese
*4 teaspoons cranberry chutney or relish
1) Preheat broiler (with oven rack in middle position).
2) On each slice of bread, spread 1 teaspoon mayo and then spread 1 teaspoon of honey Dijon mustard.
3) Layer each slice with 1/4 of the baby spinach, 3 oz. of turkey and a slice of cheese.
4) Place sandwiches on a baking sheet and put in the oven. Broil 2 minutes or until the cheese has melted.
5) Remove from heat; top each sandwich with a teaspoon of cranberry chutney or relish and serve.
